Jen Shaw

Mum of 6, author, speaker, health motivator and lover of life. Food has always been a huge part of my life. I’m blessed to have come from a family of women who have always loved to create and prepare food from scratch. From the moment I could grip a potato peeler and reach the bench my mum had me preparing vegetables for the nightly dinners, I grumbled then but boy am I thankful now. Many of my recipes are adaptions from the handwritten recipes scribbled down by a long line of passionate food focused women through the generations of my family, many raised in and around the land. Even though breads and grains still formed a staple in our home as a child our meals were highly made up of meat and vegetables, and junk foods only for special occassions. Every family affair and celebration was a time of culinary delight, (and a little bit of showing off ), food represents nourishment and love within the family, the tribe. I have a wish that all families can experience the fun and delight from cooking real food from scratch, filling their bellies with goodness.

Libby Cornish

Libby Cornish started designing gluten free recipes in 2000 when a friend’s daughter was diagnosed with allergies to wheat, dairy, eggs, nuts & soy. As there was no appropriate party food on the market at that time Libby focussed on yummy gluten free baked products. In 2004, Libby founded Decadent Alternatives Pty Ltd and initially manufactured delicious hand made gourmet gluten free biscuits, both sweet & savoury, for the Australian & export markets. Later Decadent Alternatives Pty Ltd branched out into product development for other food manufacturers & giving gluten free cooking classes. Although Decadent Alternatives Pty Ltd ceased manufacturing in 2008 Libby continued to design gluten free products. One of these products, Real Bread Mix, is currently manufactured under license by Springhill Farm. The Real Bread Mix is a versatile flour blend that can be used in gluten free baking. Unfortunately creating recipes that use the Real Bread Mix was put on hold when Libby was diagnosed with cancer in 2009. In remission since 2013 Libby has been focussing on creating fabulous gluten free recipes & sharing her knowledge of gluten free baking through the Decadent Alternatives Pty Ltd website.

Lindy Cook

Lindy Cook has been a Naturopath and Nutritionist working in private practice for well over 15 years. Encouraging her patients and their children to consume a healthy, nutritious diet has always been Lindy’s absolute passion. During her time practicing she became distressed to see the ever increasing incidence of obesity, with all its health implications, in Australia. As a mother of two she could see firsthand how the food being consumed by children was contributing to this and having such a detrimental effect on their health. Packet foods, processed foods, fast foods and just plain nutritionally ‘dead’ foods filled lunch boxes. Her research found that an amazing 43% of Australian primary school children are just not getting the daily recommended amount of fruit and vegetables. Given a third of their daily food intake is consumed at school, she knew just how important it was for this food to provide optimum nutrition - the protein, fibre, vitamins and minerals – needed for energy, growth and wellbeing.
