GLUTEN-FREE & FRUCTOSE-FREE QUINOLA RECIPE

{ INGREDIENTS }

1 cup white quinoa (uncooked)

1/2 cup quinoa flakes (you can swap these for cashews or sunflower seeds)

1/2 cup raw almond flakes

1/2 cup raw pumpkin seeds

1/2 tsp cinnamon

2 tsp raw cacao powder

2 tbsp rice malt syrup

2 tbsp coconut oil

{ METHOD }

Preheat the oven to 160C and line a baking tray with baking paper or a baking sheet.

Combine the quinoa, rolled oats, almond flakes, pumpkin seeds, cinnamon and raw cacao powder in a mixing bowl. Mix well.

Add the coconut oil and rice malt syrup to the mixture and mix until evenly coated.

Spread out the granola mixture on the baking tray and bake for 15-20 mins. Don’t be worried if your granola isn’t crunchy when you remove it from the oven – it’ll become crunchy as it cools.

Break into clusters and store in a jar or airtight container.
