GLUTEN FREE WAFFLES WITH BERRIES

{ A BREAKFAST DELIGHT }

{ INGREDIENTS }

  • WAFFLES

4 large eggs

40g caster sugar

100g gluten-free all purpose baking flour

50g millet flour

30g coconut flour

½ teaspoon gluten-free baking powder

1 teaspoon sesame seeds

200ml light coconut milk

6 tablespoons melted coconut oil

pinch of cinnamon

 

TOPPINGS

1 teaspoon icing sugar

200g fresh berries or red currant

{ METHOD }

In a mixing bowl, whisk together the dry ingredients: flours, baking powder, sesame seeds, sugar and cinnamon. In another bowl, whisk together the wet ingredients: milk, melted coconut oil and eggs. Pour the wet ingredients into the dry ingredients and stir with an electric mixer until perfectly combined.

Preheat the waffle iron.

Pour batter onto the heated waffle iron and close the lid. Once the waffle is deeply golden and crisp, transfer it to a cooling rack. Repeat with the remaining batter.

Serve waffles with berries and icing sugar.
