HEALTHY BREAKFAST WITH COCONUT YOGURT

{ HEALTHY SNACK OR A QUICK AND EASY BREAKFAST. YOU CAN ENJOY GRANOLA AGAIN!}

{ INGREDIENTS }

GRANOLA

3 tablespoons honey

½ tablespoon cinnamon

50g almonds, chopped

50g popped amaranth

50g cornflakes

50g coconut flakes

50g sesame seeds

50g dried cherries

50g cranberries

 

TO SERVE

400ml coconut yogurt

4 handfuls pitted fresh red or black cherries

2 teaspoons powdered matcha tea

{ METHOD }

Preheat the oven to 150ºC.

In a large bowl mix all granola ingredients except the cranberries, cherries and cinnamon. Place the granola onto a baking sheet lined with parchment paper and spread evenly. Bake for 15 minutes, then mix in the dried cherries, cranberries and cinnamon, and bake for 5 minutes more. Remove from the oven and set aside to cool.

Cook time: 20 MINUTES
