PANCAKES WITH HONEY AND FRESH FRUIT

{ WHIP UP THESE SWEET AND SIMPLE PANCAKES ANY MORNING OF THE WEEK }

{ INGREDIENTS }

15g brown sugar

25g corn flour

15g potato starch

15g coconut flour

2 eggs

2 tablespoons coconut oil

60ml sparkling water

1 tablespoon lemon juice

1/2 teaspoon cinnamon

1 tablespoon vegetable oil for frying

4 tablespoons honey

fresh fruit for topping

{ METHOD }

Melt coconut oil over a hot-water bath. Separate egg yolks from whites. Beat egg whites until stiff, set aside. Combine egg yolks with sugar, coconut oil, lemon juice and cinnamon, mix until they form a thick and creamy texture. Add sifted flours and mix thoroughly. Gradually add sparkling water stirring gently with a spatula, then add beaten egg whites in the same way. Fry on both sides until golden on a hot, oiled frying pan. Drizzle with honey. Serve hot with fresh fruit.
