Smoked Salmon Appetizers on Homemade Shortbread Toasts

{ INGREDIENTS }

TOASTS

30g corn flour

30g potato starch

30g millet flour

30g rice flour plus more for rolling

3 tablespoons water

6 tablespoons olive oil

½ teaspoon ground nutmeg

½ teaspoon sea salt

½ teaspoon dried rosemary

 

FILLING

5 slices smoked salmon

6  tablespoons cream cheese

1 handful snipped dill

sea salt

freshly ground black pepper

{ METHOD }

Preheat the oven to 200°C, meanwhile make the toasts. Sift the flours into a medium bowl. Add all dry ingredients, olive oil and water and mix just until the dough forms.

Place the dough on floured parchment or waxed paper; roll out 5-7mm thick, flouring dough as needed. Cut out small circles, and transfer to baking sheets lined with parchment paper. Bake for 20 minutes, until golden brown. Let cool completely on a wire rack.

When you’re ready to serve, spread 1 teaspoon cream cheese on each toast, season with salt and pepper. Top with smoked salmon and garnish with dill sprigs.
