Take 2 x apples, cut in half and remove core, leaving a little cup. Fill with frozen blueberries. Place in oven.
In a food processor add 1 cup of desiccated coconut, tablespoon of butter and cinnamon (as much as you desire, I love cinnamon). Blitz in the food processor but be careful not too long as it will bind and you will be making another sort of dish! Add some flaked almonds to the mixture.
Take out the apples which have only been baking for a short while and tablespoon the crumb on top of the apples and bake until juicy and golden (you can sprinkle some coconut sugar or brown sugar if you wish). Serve with a drizzle of maple syrup or honey. Dollop some yoghurt or to make this a yummy summer dish ice-cream of your choice- frozen banana ice-cream is divine!
