RED CURRANT MUFFINS

{ A FESTIVE TREAT FOR THE WHOLE FAMILY }

{ INGREDIENTS }

200ml water

200g red currants

7 tablespoons sugar

3 eggs

300g gluten-free all purpose baking flour

200g millet four

4 tablespoons peanut oil plus more for greasing

{ METHOD }

Preheat the oven to 180°C, prepare the muffin baking tin. In a bowl, sift dry ingredients through a sieve. Beat eggs, add peanut oil, combine with sifted fours and then with water. Add red currants. Mix with spatula until perfectly smooth. Fill the muffin tin and bake for about 25 minutes, then leave to cool.
